Whole Wheat Pumpkin Chocolate Chip Muffins


September is here!! I am ready for autumn weather. And while it definitely doesn't feel like autumn around here, I am ready to start cooking and baking like it is here. This morning, I was craving pumpkin. So I pulled out a never before used recipe, and this is what we did!

Whole Wheat Pumpkin Chocolate Chip Muffins

1/2 c. brown sugar
1/4 c. vegetable or canola oil
2 eggs (due to allergies in this house, I used EnerG egg replacer)
15 oz pumpkin puree
1 c. whole wheat flour
1 c. all purpose flour
1 t. baking powder
1/2 t. baking soda
1 t. cinnamon
1/4 t. salt
1/4 t. nutmeg (I didn't have any on hand, but it was fine without it!)
1/2 c. chocolate chips (NOWHERE near enough. I used 1 1/2 cups)

Directions:
1. Preheat oven to 400 degrees
2. Grease muffin pan or use paper liners
3. In a large bowl, combine sugar, eggs and oil.
4. Add in pumpkin puree
5. Add in all dry ingredients and mix until combined.
6. Stir in chocolate chips.
7. Fill muffin tins. Bake for 20-25 minutes.

These make 12 regular muffins or 48 mini-muffins

These are delicious and made my house smell wonderful!! I'm kinda wishing I would have done a double batch to stick some in the freezer, but now I know for next time!
