Preztel Bites

So today I decided to check off another item on my "Pinterest List of Things To Do". I saw these pretzel bites from Get Off Your Butt and Bake, and decided they would be perfect for movie night tonight.

Oh my gosh, I was so right!! But. Let me walk you through the process. There were several places I wondered if the instructions I had were correct. Turns out they all were!

1. The recipe calls for Texas size Rhoades rolls. Take each roll (completely thawed out) and cut into four equal pieces. I didn't have the rolls, but I did have some Rhoades Bread Loaves already in my freezer. Those worked fine. I'm fairly confident that any bread dough will do (next time I'll try homemade). Cutting them into pieces isn't rocket science, and even though they start out looking pretty funky, they all ended up pretty in the end!

2. After cutting your bread dough into bite size pieces, let them sit on a greased cookie sheet until they double in size. Doing it my way means no patience for extra raising time. I let them get a little bit bigger, but I don't think they doubled. Grease everything you place these rolls on throughout the entire process.
3. Carefully drop 6-10 pieces into boiling water. Am I the only one that this process sounds foreign to? I kept double checking to make sure it said water and not oil, but water it is! Let them roll around in there for about 45 seconds. They puff right up!
4. Using a slotted spoon, remove the pieces from the water and place them on a cookie sheet lined with a paper towel. I'm still trying to figure out a better way to do this. The pieces do stick to the paper, and I'm sure we ended up consuming a bit of paper towels. Any suggestions?
5. Once your pieces have drained on the paper towel (they will feel a bit slimy!), transfer them to another greased cookie sheet to be baked. Bake them at 375 for 15 minutes. I pre-salted one of my batches of pretzel bites before throwing them into the oven and loved the way they turned out. You can totally wait until after, though.

6. Once you pull them out of the oven, coat them with butter, and then you can make whatever kind of pretzel bites you wish! Cinnamon Sugar, Plain, Parmesan coated...it's all up to you! I am trying to cut out extra sugar, so I went for the Parmesan. After brushing them with butter, I sprinkled salt, garlic powder and and Parmesan blended cheese on them.
They are delicious!!! And, if you are anything like me, do NOT try making these ahead of time. I made these in the afternoon in order to beat the dinner time/bedtime/crazy night time routine, but I'm afraid I will end up eating them all. By myself. Before my husband even gets home from work.
If I can contain myself, I look forward to watching a movie with my honey, dipping these yummies in some cream cheese. Or marinara sauce. Or maybe some ranch dressing? So many possibilities!!

Couldn't you just put them on a rack, instead of on a paper towel, after taking them out of the water? Aunt Sharon
